Chili sin carne

A dinner to give you a kick on cold days or remind you of long summer nights sitting outside around the campfire.

Dinner for 4 people

2 tbsp olive oil

1 red union (finely diced)

4 cloves garlic (finely diced)

2 hot chills (finely diced)

200g cooked kidney beans

200g cooked black beans

700ml tomato passata

1 tsp cumin

1 tsp turmeric

1 1/2 tsp smoked paprika powder

8 tortillas

200g sour cream

100g Gouda cheese (grated)

  1. Heat the oil in a frying pan. Add the unions, garlic and chilli and fry for approximately 3 minutes.
  2. Add the kidney beans, black beans and red lentils and fry for about a minute.
  3. Deglaze the pan with vinegar and add the tomato pasta and reduce the heat. Let it simmer on medium to low heat for 45 minutes to 1 hour. The longer you cook it, the better it will become.
  4. Season with cumin, turmeric, paprika and salt and pepper to taste.
  5. Heat the tortillas in a dry pan until they puff up. Fill the tortilla generously and add a tbsp of sour cream and a sprinkle of cheese. BON APPÉTIT!
