Asian Broccoli Soup

Lunch for 4 people

350 g broccoli (cut into florets)

1 leek (cut into rings)

1 tbsp olive oil

200 ml vegetable broth

200 ml coconut milk

2 tbsp light miso-paste

2 tbsp soy sauce

1 lemon (juice)

  1. Heat the oil in a large pot.
  2. Sauté the leek for 2 minutes. Add the broccoli and sauté for further 3 minutes.
  3. Deglaze with the vegetable broth and coconut milk.
  4. Bring to the boil and reduce the heat. Cover with a lit and let it simmer for approximately 20 minutes (until the broccoli is tender)
  5. Puree the soup. Season with miso-paste, soy sauce and lemon juice. Season with salt and pepper to taste – BON APPÉTIT!
